1 lb ground beef, cooked
1 each onion, minced
2 can chili pepper, diced
1 each clove garlic, minced
2 pt tomato sauce
1/2 tsp salt
1 each egg, beaten
1/2 lb cheddar cheese,grated
12 each tortillas, soft
1 olive oil
1 red sauce
2 tsp oil
Directions
Heat 1/2 inch of oil in skillet and fry tortillas about 15 seconds
each side; remove and pat off excess oil. In separate skillet heat 2
tbl oil* and saute' onion until tender. Add chili peppers, garlic,
tomato sauce, salt and pepper. Add ground beef. Simmer uncovered 10
minutes. Dip tortillas in egg,fill with sauce mixture, roll and place
in shallow greased baking dish. Pour red sauce over tortillas, top
with grated cheese and bake uncovered at 350 deg for 15 minutes.
*Quanitiy for standard serving size.

The History of Recipes
We are able to track the history of written recipes way back into history, at least as far into history as early Egypt, and potentially, even further back. Interesting though that is, mostly, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move on, there were some recipe books which appeared in the fourteenth century - a recipe book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian food that is popular today, but rather recipes for the types of food on the menus of the upper classes of those days. By the advent of the 20th century, cookery publications are in great demand, mostly as a result of higher levels of literacy, people having increased leisure time and disposable income. |
