The History of Recipes
Written cooking instructions as a concept can be traced far back into ancient history, certainly as far back as the Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these early records were just very simple pictorial instructions for preparing food.
Progressing into The time of the romans 25BC a roman called Apicius created a few documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius tells us how the Romans were skilled in the use of a wide range of herbs and spices, including a few you will know for example bay, fennel and dill. In the 15th century, people returning from the crusades brought us a variety of spices and herbs from middle-east cuisine, including parsley, basil and rosemary. These new culinary innovations caused a torrent in recipe publications, most of which are kept safe in private cookery archives. By the arrival of the twentieth century, cookbooks were greatly in demand mostly due to higher levels of literacy, people having more leisure time and being a little richer. |
