The History of Recipes
It is quite possible to prove the history of written cooking instructions back into ancient history, in truth as far into history as the Egypt of the Pharoahs, and maybe further still. In practice though, in the main part, these old records were just very basic hieroglyphic or cunieform recipes for preparing food.
Progressing into Roman times around 25BC a man called Apicius created some documents which described recipes enjoyed by his fellow Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the ancient cooks made use of a good variety of spices, including some familiar names like bay, fennel and dill. For the centuries that followed, the rich families of the West tried to serve up the most extravagent banquests, and as a consequence, the best cooks and their recipes were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down recipes to help cooks of their time. The introduction of the TV brings us celebrity chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on this web site. |
