The History of Recipes

We can track the history of written recipes back into history, at least as far as pharonic Egypt, and possibly even further than that. However, generally, these old cook books were just primitive pictorial instructions for food preparation.

In fact, the oldest recipe discovered, according to experts are a few ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful.

Progressing into Roman times around 25BC a man called Apicius compiled a few documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius describes how the ancient cooks used a wide range of spices and herbs, including many that are still in use today like basil, rue and dill.

Later on, there are two interesting books published in the 14th Century ; a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these have no connection with the indian food that is familiar to us all today, but rather recipes for the types of food on the menus of the rich and powerful of that time.

Later on in the 1400s, the Crusaders brought back many foods and spices from the holy land, such as basil and coriander. These new foods and spices prompted an explosion in recipe publications, most of which still exist in private collections.

For the next few years, the wealthy families of the West competed with each other to serve up the most extravagent banquests, and consequentially cooks and their recipe collections became highly prized. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, testing, and recording recipes that were common in the better off homes of the day.

By the advent of the twentieth century, cooking books were in high demand, as a result of better eduction, people having more spare time and disposable income.

The introduction of the TV brought us cooking programs and the demand for the spin-off recipe books.

And that brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes just like those on this recipe site.
