The History of Recipes
It is quite feasible to follow the history of recipes way back into the far past, certainly as far as the ancient Egyptians, and possibly even further. Interesting though that is, generally, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of documents detailing recipes prepared by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Aspicius recounts how the Roman cooks were skilled in the use of a wide range of spices and herbs, including some familiar names like bay, rue and asafoetida. During the next few hundred years, the upper-class families of Europe competed to lay on the most exotic banquets, and as a result cooks and their collection of recipes were highly sought after. However, it wasn`t until the nineteenth century that fine cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, testing, and writing down recipes to help cooks of their time. Like it or not, the introduction of TV brings us TV cooks and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this site. |
