The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into history, at least as far back into recorded history as ancient Egypt, and possibly even further. In practice though, these, old cook books were just very simple hieroglyphic instructions for food preparation.
As we move into The time of the romans 25BC a roman called Apicius wrote a few documents describing recipes prepared by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, entrees and afters, a style of dining still practiced today. Aspicius tells us how the cooks of his times used a wide range of aromatic flavours, including a few that are still present in modern kitchens like bay, rue and dill. During the succeeding few centuries, the powerful and wealthy competed with each other to offer the most exotic meals, and as a result chefs and their recipe collections increased in prestige. However, it was during the 1800s the formal cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them. By the time we get to the twentieth century, cook books were in great demand, mostly due to increased literacy, more spare time and a general increase in wealth. |
