The History of Recipes
It is possible to follow the history of `recipes` far back into antiquity, in fact as far into history as the ancient Egyptians, and possibly even further. However, in the main part, these early cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, is a collection of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Later, we find some interesting books which date from the 1300s - a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are not about the indian food that is served today, but rather accounts of the types of food enjoyed by the rich and wealthy people of those days. For the decades that followed, the powerful and wealthy houses strove to offer the most exotic banquets, and as a result cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and publishing recipes to allow everyone to enjoy them. By the time we get to the 20th century, cook books are greatly in demand mostly due to increased literacy, more spare time and being a little richer. |
