The History of Recipes
It is possible to track the history of written recipes way back into antiquity, in fact as far back into recorded history as early Egypt, and possibly even further than that. In practice though, generally, these early records were just very basic hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe found, according to experts are some ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans 25BC a man called Apicius assembled a few documents detailing recipes enjoyed by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, entrees and dessert, a very modern way of dining. This early Roman chef informs us how the Roman chefs made use of a good variety of spices and herbs, including some that we all recognise such as thyme, fennel and parsley. Over the succeeding few centuries, the powerful families of the West competed to serve up the most extravagent meals, and as a result the best chefs and their recipes became highly prized. Nevertheless, it was during the 1800s that formal cookery and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down the recipes that were being prepared for the better households. When we get to the 20th century, recipe books are highly popular mostly as a result of increased literacy, people having increased free time and disposable income. |
