Belgian Cheese Tart Recipe

Ingredients

CRUST

1 shortbread, see recipe # 22

TART

1/2 lb cream cheese
3 tbsp confectioners' sugar
1 tsp lemon juice
2 each eggs, large
2/3 cup heavy cream

Directions

NOTE: As this is a tart rather than a cheesecake, you should use an
8-inch tart pan or flan ring. Preheat the oven to 350 degrees F. In a
large mixing bowl, beat together the cheese, sugar and lemon juice
until the mixture is light and fluffy. Add the eggs, one at a time
beating well after each addition. Beat until very smooth after the
last addition. Stir in the cream and pour mixture into the prepared
crust. Brush the top of the tart with an egg and 1 TBLS of
confectioners sugar that has been beaten together. Bake for 25
minutes or until set. Cool to room temperature and then chill before
serving.

The History of Recipes

It is quite feasible to prove the history of recipes far back into distant history, in fact as far as early Egypt, and possibly even further. Interesting though that is, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for food preparation.

In an interesting twist, the most ancient recipe discovered so far, according to experts in ancient history are a few ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`.

Later on, in The time of the romans 25BC a roman called Apicius wrote some documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, he describes how the meals were separated into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the ancient chefs made use of many different spices, including a few that will be familiar to modern chefs for example thyme, mint and dill.

Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from Arab cuisine, such as parsley and basil. These new foods and tastes created a torrent in manuscripts on food, the majority of which are kept safe in academic collections.

The TV revolution gave us TV chefs and the accompanying recipe books.

And that brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes like those on this web site.
