The History of Recipes
It is quite possible to trace the history of recipes far back into history, certainly as far into history as ancient Egypt, and maybe even further. However, generally, these ancient recipes were just simple hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the oldest recipe found, according to food historians are some tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. During Roman times 25BC a roman called Apicius wrote a number of documents describing recipes cooked by the Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and afters, something we still use today. This early Roman chef describes how the Roman chefs made use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs for example basil, rue and asafoetida. In the fifteenth century, people returning from the crusades brought back many spices and herbs from the East, including spices such as parsley, basil and rosemary. These new foods and spices prompted a surge in manuscripts on cookery, most of which are kept safe in academic collections. During the succeeding few centuries, the powerful and rich houses competed with each other to lay on the most exotic meals, and as a result chefs and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing recipes of the day. By the arrival of the 1900s, cook books were in high demand, mostly due to increased literacy, leisure time and having more money to spend. |
