4 oz unsweetened chocolate
1 cup milk
2 large eggs
1 cup sugar
1 cup heavy cream
1 tsp vanilla
1 pinch salt
Directions
Melt chocolate in double boiler over hot (not boiling) water.
Gradually whisk in milk, stir until smooth. Remove from heat; let
cool.
Whisk eggs in a mixing bowl until light and fluffy, 1-2 minutes.
Gradually whisk in sugar, then continue whisking 1 minute longer
until completely blended. Add cream, vanilla, and salt; whisk. Add
the choclate mixture; blend well. Cover, chill, and freeze according
to ice cream maker's
directions. Makes 1 quart.

The History of Recipes
Written recipes as a concept can be traced back into the distant past, certainly as far as the Egyptians, and quite possibly further than that. Interesting though that is, generally, these ancient cook books were just simple pictorial instructions for preparing food.
In fact, the oldest recipe in existence, according to experts are some ancient tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later on, in Roman times around 25BC a man called Apicius created a few documents detailing recipes prepared by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and desserts, something that is very familiar to us today. This early Roman chef describes how the early Romans used a good variety of spices, including some that we all recognise like thyme, fennel and asafoetida. Later on, we have a couple of cookery books dating from the fourteenth century : a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the spicy food that appears on menues today, but instead accounts of the types of food eaten by the rich people of the period. Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab countries, including spices like basil and rosemary. These new culinary innovations prompted an increase in books on cooking, some of which are kept safe in private cookery archives. By the advent of the twentieth century, cooking publications are highly popular due to more people being able to read, people having increased free time and disposable income. The introduction of the TV brings us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes such as those found on this web site. |
