The History of Recipes
Written recipes as a concept can be observed back into distant history, in truth as far as pharonic Egypt, and possibly even further than that. Interesting though that is, generally, these ancient cookbooks were just very basic hieroglyphic or cunieform recipes for preparing food.
Much later, in Roman times a man called Apicius compiled a number of scripts which described recipes prepared by wealthy roman citizens. In his works, he recounts how the roman meals were split into starters, entrees and afters, something that is very familiar to us today. Additionally, he tells us how the Roman chefs were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern cooks such as bay, rue and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many new foods and herbs from the East, such as parsley and basil. The introduction of these new culinary ideas was responsible for a surge in manuscripts on cooking, some of which are kept safe in private libraries. The TV revolution brought us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access thousands of recipes just like those on sites such as the one you are reading now. |
