The History of Recipes
Recipes as a concept can be found back into the distant past, at least as far back as the early Egyptians, and potentially, even further back. However, mostly, these old recipes were just primitive hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts is a series of clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Progressing into Roman times 25BC a man called Apicius assembled a number of scripts detailing recipes cooked by wealthy roman citizens. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvre, main course and afters, a very modern way of dining. He also informs us how the cooks of his times used a wide range of spices and herbs, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. Over the succeeding few centuries, the powerful families of Wesstern Europe competed to offer the most exotic banquets, and because of this the best chefs and their recipes became highly prized. Nevertheless, it wasn`t until the nineteenth century that cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, testing, and publishing recipes of the day. The TV revolution brought us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes just like those on this site. |
