The History of Recipes
Historians have tracked the existance of recipes back into history, certainly as far back into recorded history as pharonic Egypt, and maybe further still. In practice though, in the main part, these old cook books were just very basic hieroglyphic recipes for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a collection of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As our culinary historical trip moves on a few more years there are a couple of recipe books published in the 14th Century : a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the indian food that is familiar to us all today, but rather descriptions of the types of food cooked for the rich and powerful of the time. In the fifteenth century, knights returning from the crusades brought us a variety of foods and spices from middle-east cuisine, including parsley, basil and rosemary. The introduction of these new tastes prompted a surge in recipe publications, most of which still exist in academic collections. Over the following few hundred years, the wealthy families of Wesstern Europe competed to serve the most extravagent banquests, and because of this the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and recording the recipes of their peers. By the arrival of the 20th century, recipe publications are highly popular as a result of higher levels of literacy, people having more spare time and a general increase in wealth. The introduction of television brought us TV cooks and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everybody to access thousands of recipes like those on this recipe site. |
