The History of Recipes
Academics have tracked the existance of recipes far back into distant history, at least as far as pharonic Egypt, and maybe further still. Having said that, in the main part, these early cook books were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered, according to food historians are a few ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. During Roman times around 25BC a roman called Apicius wrote a collection of documents describing recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into starters, main course and desserts, a style of dining still practiced today. Aspicius describes how the ancient Romans were skilled in the use of many spices and herbs, including a few that will be familiar to modern cooks like bay, mint and dill. During the succeeding few hundred years, the powerful and wealthy competed with each other to serve up the most extravagent banquests, and consequentially the best cooks and their recipe collections could command a high salary. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes to help cooks of their time. By the arrival of the 1900s, cookbooks are in high demand, as a result of better eduction, people having more leisure time and having more money to spend. |
