The History of Recipes
Food historians have tracked the existance of recipes back into history, in fact as far into history as the Egypt of the Pharoahs, and quite possibly further than that. However, generally, these old cookbooks were just simple pictorial recipes for food preparation.
As we move into Roman times 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes prepared by the Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and afters, something we still use today. Aspicius informs us how the Romans made use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs such as bay, fennel and dill. Later, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the holy land, including coriander, parsley, and basil. The introduction of these new tastes led to an eruption in manuscripts on cooking, most of which are kept safe in academic collections. The revolution that is television brings us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes such as those found on our site. |
