The History of Recipes
Historians have proved the existence of recipes back into the far past, at least as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. In practice though, mostly, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to food historians is a series of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into The time of the romans 25BC a man called Apicius created a number of documents describing recipes prepared by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the ancient cooks made use of a good variety of aromatic flavours, including a few you will know like basil, rue and asafoetida. In the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the holy land, including spices like rosemary and coriander. The introduction of these new foods and spices created an outbreak in recipe publications, most of which are now in private collections. By the arrival of the twentieth century, recipe books are highly popular due to better eduction, people having increased spare time and having more money to spend. The introduction of television brought us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through thousands of recipes like those on our web site. |
