The History of Recipes
Historians have proved the existence of recipes far back into the far past, in truth as far back into history as early Egypt, and maybe even further. Interesting though that maybe, sadly, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. As our culinary historical trip moves to more modern times we find a couple of interesting cookery books which were published in the 1300s ; a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, they are nothing to do with the indian food that is served today, but instead recipes for the types of meals on the menus of the rich and powerful of the time. In the 15th century, people returning from the crusades brought back many new foods and herbs from Arab cuisine, including spices such as rosemary and coriander. These new spices and herbs was responsible for a surge in recipe manuscripts, some of which are now in private collections. Over the next few centuries, the families of Europe tried to serve up the most extravagent meals, and because of this chefs and their recipe collections became highly prized. Even so, it was during the 1800s that fine cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, trying out, and publishing recipes for their fellow cooks to enjoy. The introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on sites such as this. |
