The History of Recipes
It is possible to read the history of written recipes way back into ancient history, certainly as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that is, these, ancient cook books were just basic pictorial recipes for preparing food.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, is a collection of tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Later, we have a couple of recipe books dating from the 1300s : one book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these are nothing to do with the indian curry that we all know today, but instead descriptions of the types of meals on the tables of the rich people of that period. During the following few hundred years, the rich families of Europe competed to serve the most exotic banquets, and as a result chefs and their collection of recipes were greatly in demand. However, it wasn`t until the 1800s that fine cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and publishing the recipes of their peers. By the time we get to the 1900s, recipe books were highly popular mostly due to increased literacy, leisure time and being a little richer. |
