1 lb flour
1 tsp salt
2 oz lard
1/2 oz yeast
1 dash caster sugar
1/2 pt warm water
2 oz granulated sugar
Directions
Set oven to 425/F or Mark 7. Mix the flour and salt together, then
rub in 1 oz. of the lard. Cream the yeast with the sugar and stir in
the water and allow to sponge. lVlake a well in the flour and add the
yeast mixture. Mix well then turn out on to a lightly floured
surface. Knead, then cover and leave in a warm place until the dough
has doubled in bulk. Knead again, then roll out into an oblong 1/2
inch thick. Flake the remaining lard and dot evenly over the dough,
then sprinkle the sugar over. Roll up like a Swiss Roll, put on to a
greased baking sheet and bake for 30 minutes. When removed from the
oven brush the top with a little milk while warm to give a sheen. An
alternative way of baking Brotherly Love is to cut the `Swiss Roll'
into 1 inch slices and put on a greased baking sheet to cook for 30
minutes.

The History of Recipes
Academics have proved the existence of recipes way back into distant history, at least as far into history as pharonic Egypt, and possibly even further than that. However, in the main part, these old cookbooks were just simple hieroglyphic instructions for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents detailing recipes cooked by his fellow Romans. In his publication, he tells us how the meals were split into starters, main course and afters, something that is very familiar to us today. Additionally, he informs us how the cooks of his times used a good variety of herbs, including many that are still in use today for example bay, rue and dill. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and herbs from the holy lands, including spices such as basil and coriander. The introduction of these new foods and spices led to an outbreak in recipe manuscripts, many of which are now in private libraries. By the advent of the 1900s, recipe books were greatly in demand mostly as a result of better eduction, more spare time and having more money to spend. |
