The History of Recipes
Written recipes as a concept can be observed far back into ancient history, at least as far back into recorded history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, these, early recipes were just basic hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history are some clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Much later, in Roman times a roman called Apicius compiled some scripts describing recipes prepared by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into starters, entrees and desserts, a style of dining still practiced today. This early Roman chef informs us how the Roman cooks made use of a wide range of herbs and spices, including some that we all recognise such as thyme, rue and parsley. Over the succeeding few hundred years, the rich and powerful families of the West competed with each other to serve up the most extravagent banquests, and consequentially the best cooks and their collection of recipes could command a high salary. Even so, it was during the 1800s that cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. When we get to the twentieth century, cookery books were in great demand, as a result of better eduction, people having more leisure time and a general increase in wealth. |
