The History of Recipes
We can follow the history of meal recipes far back into history, in truth as far into history as the ancient Egyptians, and potentially, even further back. However, in the main part, these old cookbooks were just very simple hieroglyphic recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to experts is a series of ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius wrote a number of scripts which described recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, entrees and afters, a style of dining still practiced today. Aspicius recounts how the ancient chefs made use of a good variety of spices, including a few that will be familiar to modern cooks such as bay, fennel and dill. Later, we find two interesting recipe books dating from the fourteenth century - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these are nothing to do with the spicy food that is popular today, but instead recipes for the types of food prepared for the rich. Later on in the 1400s, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices like coriander, basil and rosemary. These new herbs and spices prompted a surge in cookery books, many of which are now in private libraries. For the centuries that followed, the powerful and rich houses tried to serve up the most exotic banquets, and because of this the best chefs and their recipes became highly prized. Nevertheless, it wasn`t until the 1800s the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cook books are increasing in popularity mostly due to higher levels of literacy, people having increased leisure time and disposable income. The arrival of television gave us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes such as those found on this recipe site. |
