The History of Recipes
We can track the history of written recipes way back into antiquity, in truth as far back into history as early Egypt, and maybe further still. In practice though, these, old cook books were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, is a collection of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Later on, there were a couple of interesting cookery books which appeared in the 14th Century - one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, they are unconnected to the indian food that is familiar to us all today, but instead recipes for the types of food on the menues of the rich and powerful of that period. For the next few years, the rich and powerful families of Europe tried to serve up the most exotic meals, and as a result the best cooks and their recipes were greatly in demand. However, it was during the 19th century that haute cuisine and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, trying out, and writing down popular recipes of the day. By the advent of the twentieth century, cookery publications are increasing in popularity mostly as a result of increased literacy, people having more leisure time and being a little richer. |
