The History of Recipes
Transcribed cooking instructions as an idea can be tracked back into the distant past, in fact as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, sadly, these early cook books were just simple pictorial recipes for preparing meals.
As we move into The time of the roman empire around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, something we still use today. Additionally, he describes how the ancient cooks made use of a good variety of spices, including a few that will be familiar to modern cooks like thyme, rue and dill. Over the following few centuries, the powerful families of Wesstern Europe strove to serve up the most extravagent banquests, and because of this chefs and their recipe collections increased in prestige. However, it wasn`t until the 1800s that haute cuisine and recipe books became popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and publishing recipes to help cooks of their time. The arrival of TV brings us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on the site you are now reading. |
