The History of Recipes
It is possible to read the history of written recipes far back into history, in truth as far into history as ancient Egypt, and potentially, even further back. In practice though, in the main part, these old recipes were just primitive hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a roman called Apicius wrote a number of scripts which described recipes enjoyed by his fellow Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Additionally, he recounts how the chefs of Roman times made use of many herbs and spices, including some that we all recognise such as basil, fennel and dill. Later, in the fifteenth century, people returning from the crusades brought back many new foods and herbs from the holy land, including spices like coriander, basil and rosemary. The introduction of these new tastes created an explosion in recipe manuscripts, some of which still exist in private libraries. During the following few hundred years, the powerful and rich houses tried to serve up the most exotic meals, and consequentially the best chefs and their recipes were highly sought after. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe publications really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. The arrival of television gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on this recipe site. |
