The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into history, at least as far into history as ancient Egypt, and quite possibly further than that. In practice though, generally, these old cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
During the time of the Romans a roman called Apicius wrote a number of scripts detailing recipes cooked by the Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. He also informs us how the Roman chefs made use of a wide range of aromatic flavors, including many that are still in use today like bay, fennel and parsley. Over the next few hundred years, the powerful and rich houses competed to offer the most exotic meals, and because of this the best chefs and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and recording recipes to help cooks of their time. The arrival of TV gave us TV cookery programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
