Buckwheat Crepes Recipe

Ingredients

1 cup water
1 cup milk
3 eggs
1/2 cup buckwheat flour
2/3 cup white flour
1/2 tsp salt
3 tbsp melted butter

Directions

Buckwheat pancakes are great, but here's something a little more
elegant: buckwheat crepes. Serve them with melted butter and cinnamon
sugar. TO MAKE BATTER IN A BLENDER, put all ingredients into a
blender jar in order given, and blend briefly at medium speed. Stop
and scrape down the sides of the blender jar; then blend for another
5 seconds or so. Pour out the batter into a bowl, cover and let rest
for 1 hour before using. To make batter by hand, beat the eggs
slightly, add milk, water, salt and melted butter, then gradually
whisk in flours. Pour the batter through a strainer and let sit for
1/2 hour before using. To cook crepes, melt a little butter in a
crepe pan and cook. As buckwheat has an enormous capacity to absorb
liquid, you might find it necessary to thin the batter with more milk
or water.

Servings: 6 servings

The History of Recipes

Recipes as a concept can be tracked back into ancient history, certainly as far back into recorded history as the Egyptians, and maybe even further. Having said that, mostly, these ancient cook books were just very basic pictorial recipes for food preparation.

Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, are a few tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`.

During the time of the Roman Empire a man called Apicius compiled a number of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the cooks of Roman times were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern chefs for example bay, rue and parsley.

In the fifteenth century, knights returning from the crusades brought us a variety of foods and spices from the holy land, including spices like parsley, basil and rosemary. These new herbs and spices prompted a surge in recipe manuscripts, many of which are kept safe in private libraries.

Over the following few hundred years, the wealthy families of Wesstern Europe strove to serve the most extravagent banquests, and consequentially the best chefs and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, verifying, and publishing recipes of the day.

By the arrival of the 20th century, recipe publications are greatly in demand as a result of better eduction, people having increased leisure time and being a little richer.

The introduction of television brought us TV chefs and the demand for the spin-off recipe books.

And that brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes such as those found on our web site.
