The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions back into the distant past, in truth as far into history as the Egyptians, and possibly even further than that. However, these, ancient recipes were just basic hieroglyphic instructions for preparing meals.
Progressing into The time of the roman empire 25BC a man called Apicius assembled some documents which described recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and afters, a style of dining still practiced today. Aspicius describes how the early Romans used a wide range of aromatic flavours, including some that we all recognise such as basil, fennel and dill. For the centuries that followed, the powerful families of Europe tried to serve up the best banquets, and because of this cooks and their recipe collections were much in demand. Nevertheless, it was during the 19th century that cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and writing down the recipes that were being prepared for the better households. By the time we get to the 20th century, recipe publications were increasing in popularity due to higher levels of literacy, more free time and having more money. |
