1/2 lb ground beef, lean
2 1/2 crackers, crushed
2 tbsp onion, finely chopped
2 tbsp celery, finely chopped
1/2 egg (or yolk only)
1/2 tsp worcestershire sauce
1/2 tsp oregano
3 mushrooms, sliced
1 pepperoni slices
1/2 medium tomato, sliced
2 tbsp green pepper, chopped
1/4 tsp pepper, freshly ground
1/2 cup mozzarella cheese, shredded
1/2 tbsp parmesan cheese, grated
Directions
Combine ground beef, cracker crumbs, onion, celery, egg, sauce, spice
and mix well.
Use a tinfoil pieplate, pat beef mixture into a patty. Scatter
mushrooms, pepperoni, tomato and green pepper over. Sprinkle with
pepper and top with cheeses.
Bake at 350F 20-25 min until meat is no longer pink.

The History of Recipes
Recipes as a concept can be observed back into history, in fact as far back as early Egypt, and maybe further still. Having said that, generally, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to historians are a few clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into starters, main meal and desserts, a very modern way of dining. Additionally, he informs us how the Roman cooks used many spices and herbs, including some that we all recognise such as bay, rue and dill. As our culinary historical trip moves to more modern times there are some interesting books which were published in the 14th Century - one book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the indian curry that we all know today, but instead accounts of the types of food prepared by the chefs of the rich and powerful of the period. In the 15th century, knights returning from the crusades brought us a variety of foods and herbs from Arab cooking, including coriander, parsley, and rosemary. The introduction of these new foods and spices was responsible for an eruption in books on cookery, the majority of which are kept safe in private cookery archives. When we get to the 1900s, recipe publications are greatly in demand mostly as a result of more people being able to read, people having more leisure time and having more money. The arrival of TV brought us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through thousands of recipes like the ones you can find on this site. |
