The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into the far past, in fact as far as the ancient Egyptians, and quite possibly further than that. Interesting though that is, mostly, these ancient cookbooks were just very basic pictorial recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Moving on, we have a couple of books which date from the fourteenth century - one book titled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the spicy food that is served today, but rather recipes for the types of meals cooked for the upper classes of those days. Later, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the holy lands, including coriander, parsley, and rosemary. These new foods and tastes was responsible for an increase in manuscripts on cookery, the majority of which are now in private collections. During the next few hundred years, the upper-class families of Europe strove to lay on the most exotic banquets, and consequentially the best cooks and their recipes were greatly in demand. However, it was during the nineteenth century the formal cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, testing, and publishing recipes to help cooks of their time. By the advent of the 1900s, cooking books are starting to become popular mostly due to better eduction, more leisure time and being a little richer. The revolution that is television brought us TV cookery programs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through thousands of recipes like the ones you can find on this site. |
