The History of Recipes
We are able to track the history of meal recipes far back into distant history, certainly as far back into history as the Egyptians, and possibly even further than that. Interesting though that maybe, in the main part, these ancient records were just simple hieroglyphic or cunieform recipes for meal preparation.
Progressing into The time of the roman empire 25BC a man called Apicius compiled a few scripts describing recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius also informs us how the ancient cooks were skilled in the use of a good variety of herbs, including some familiar names like basil, fennel and dill. For the centuries that followed, the wealthy families of Wesstern Europe competed with each other to offer the most exotic banquets, and as a consequence, chefs and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 19th century that cookery and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down recipes to allow everyone to enjoy them. By the time we get to the 20th century, recipe publications are in great demand, due to more people being able to read, more spare time and having more money to spend. |
