1 butterball roasting broiler
1 garlic clove, minced
1 juice and peel of 1 lemon
4 large fresh rosemary sprigs
1 salt to taste
1 pepper to taste
2 tbsp oil
1 paprika
6 medium potatoes, cut into pieces
Directions
Preheat oven to 425'F. Rinse chicken. Mix garlic, lemon juice,
rosemary, salt and pepper; rub under skin of breast and thigh area.
Tie legs up with string. Rub outside of skin with mixture of lemon
peel and oil; sprinkle generously with paprika. Place breast side up
in lightly greased large roasting pan; add potatoes. Bake until
chicken is done and juices run clear, about 20-25 minutes per pound
(or until internal meat temperature reaches 165'F.), brushing
occasionally with pan juices. Let stand 10 minutes.

The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into distant history, in fact as far back as the Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these early records were just primitive hieroglyphic or cunieform recipes for preparing food.

Don`t be fooled by the titles though, they have no connection with the spicy food that we all know today, but rather descriptions of the types of meals prepared by the chefs of the upper classes of that period. Later on in the 1400s, knights returning from the crusades brought back many new spices and herbs from the holy land, such as rosemary and coriander. These new culinary innovations was responsible for an explosion in manuscripts on cookery, most of which still exist in academic collections. The introduction of the TV brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to access thousands of recipes such as those found on our site. |
