The History of Recipes
It is actually possible to trace the history of written recipes far back into ancient history, certainly as far back as pharonic Egypt, and quite possibly further than that. Having said that, generally, these old recipes were just primitive pictorial recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a collection of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius created some documents showing how to cook the recipes enjoyed by the Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, a very modern way of dining. He also recounts how the Roman cooks were skilled in the use of a wide range of herbs, including a few you will know like thyme, fennel and asafoetida. Moving on, we find some books from the 14th Century : a book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, these are not about the spicy food that we all know today, but instead descriptions of the types of food prepared by the chefs of the upper classes of that time. Later, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab cuisine, such as basil and rosemary. These new herbs and spices prompted an increase in books on cooking, most of which are kept safe in academic collections. During the next few hundred years, the powerful and rich strove to serve up the best banquets, and because of this cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that fine cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and publishing recipes that were common in the better off homes of the day. By the advent of the 1900s, cookbooks are greatly in demand due to higher levels of literacy, people having more free time and a general increase in wealth. Like it or not, the introduction of TV gave us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes just like those on this web site. |
