1 each ancho chili
1 medium butternut squash, peeled - & cubed
1/4 tsp cumin
1 tbsp salt
1 pinch cayenne
Directions
Put the ancho chili in a small saucepan and cover with water. Bring
to a boil. Reduce heat and simmer until chili is soft, about 10 mins.
Remove the chili from the liquid. When cool enough to handle, stem
the chili, split it open, and scrape out the seeds.
Meanwhile, put the squash in a saucepan and cover with water. Bring
to a boil over medium-high heat. Reduce heat and simmer until the
squash is tender, about 10 mins. Drain well and transfer to a food
processor. Add the chili and the cumin and process until smooth,
stopping to scrape down the sides of the bowl. Season with salt and
cayenne. Divide among 4 plates and serve immediately.

The History of Recipes
We can follow the history of meal recipes back into history, at least as far back as the ancient Egyptians, and quite possibly further than that. However, sadly, these early recipes were just very simple hieroglyphic recipes for meal preparation.
In fact, the oldest recipe discovered, according to academics is a collection of ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes cooked by the Romans. In his scrolls, he tells us how the roman meals were divided into starters, main meal and afters, something we still use today. Aspicius recounts how the cooks of his times used a good variety of herbs and spices, including many that are still in use today for example thyme, rue and asafoetida. In the 15th century, knights returning from the crusades brought back a variety of spices and herbs from Arab countries, including rosemary and coriander. These new culinary innovations was responsible for an explosion in cookery books, many of which still exist in private collections. When we get to the 1900s, cookery publications were greatly in demand mostly due to more people being able to read, more leisure time and having more money. The arrival of TV brings us TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on our site. |
