The History of Recipes
Historians have traced the existence of recipes far back into the far past, certainly as far back into history as the Egyptians, and maybe further still. Interesting though that is, in the main part, these ancient records were just very simple pictorial instructions for meal preparation.
Progressing into The time of the romans 25BC a roman called Apicius created a number of documents detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into starters, main course and desserts, something that is very familiar to us today. Additionally, he describes how the Roman chefs were skilled in the use of a wide range of spices and herbs, including a few you will know for example basil, mint and dill. In the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from middle-east cuisine, including coriander, parsley, basil and rosemary. These new foods and tastes was responsible for a torrent in cookery books, some of which are now in academic collections. The introduction of television gave us TV cooks and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to access massive numbers of recipes just like those on this site. |
