The History of Recipes
We can read the history of `recipes` way back into history, at least as far as the Egyptians, and possibly even further than that. In practice though, mostly, these old records were just basic hieroglyphic instructions for preparing food.
In fact, the oldest recipe in existence, according to food historians are some ancient tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius compiled a few documents describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and afters, something that is very familiar to us today. Aspicius also recounts how the Romans were skilled in the use of a good variety of herbs and spices, including many that are still in use today for example basil, mint and dill. For the next few years, the rich and powerful families of Europe competed with each other to serve the best banquets, and as a consequence, cooks and their recipe collections could command a high salary. Notwithstanding that, it was during the 1800s that formal cookery and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and recording recipes of the day. By the advent of the twentieth century, cookery publications are in high demand, due to more people being able to read, people having more spare time and having more money to spend. |
