1 cup brown sugar lightly packed
1 tbsp cornstarch
1/4 cup corn syrup dark
1/4 tsp salt
3 cup milk
2 eggs
1 can evaporated milk (5.33oz)
1 cup whipping cream
1 tsp vanilla extract
Directions
In a medium saucepan, combine brown sugar and cornstarch. Stir in corn
syrup, salt and milk. Stir over medium heat until brown sugar melts
and mixture begins to simmer; set aside. In a small bowl, beat eggs
until blended. Stir about 1 cup hot milk mixture into eggs. Stir egg
mixture into remaining milk mixture. Cook and stir over low heat
until slightly thickened, about 2 minutes. Stir in evaporated milk,
whipping cream and vanilla. Cool to room temperature. Pour into ice
cream canister. Freeze in ice cream maker according to manufacturer's
directions. Makes about 2 quarts.

The History of Recipes
It is possible to read the history of written recipes way back into the distant past, certainly as far into history as the Egyptians, and possibly even further than that. Interesting though that maybe, generally, these old cook books were just basic hieroglyphic recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to experts in ancient history are a few clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. As we move into The time of the roman empire 25BC a man called Apicius compiled some scripts which described recipes prepared by wealthy Romans. In his scrolls, he describes how the meals were separated into starters, entrees and desserts, a style of dining still practiced today. Additionally, he tells us how the Roman chefs used a good variety of spices and herbs, including a few that will be familiar to modern cooks for example thyme, fennel and dill. Over the following few hundred years, the rich families of Europe tried to lay on the best banquets, and because of this cooks and their collection of recipes increased in prestige. However, it was during the 1800s the formal cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collecting, testing, and publishing recipes of the day. The introduction of television brought us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access thousands of recipes such as those found on this site. |
