1 cup brown sugar lightly packed
1 tbsp cornstarch
1/4 cup corn syrup dark
1/4 tsp salt
3 cup milk
2 eggs
1 can evaporated milk (5.33oz)
1 cup whipping cream
1 tsp vanilla extract
Directions
In a medium saucepan, combine brown sugar and cornstarch. Stir in corn
syrup, salt and milk. Stir over medium heat until brown sugar melts
and mixture begins to simmer; set aside. In a small bowl, beat eggs
until blended. Stir about 1 cup hot milk mixture into eggs. Stir egg
mixture into remaining milk mixture. Cook and stir over low heat
until slightly thickened, about 2 minutes. Stir in evaporated milk,
whipping cream and vanilla. Cool to room temperature. Pour into ice
cream canister. Freeze in ice cream maker according to manufacturer's
directions. Makes about 2 quarts.

The History of Recipes
It is possible to read the history of written recipes far back into history, in truth as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. As we move into The time of the romans 25BC a roman called Apicius compiled a few scripts which described recipes prepared by wealthy roman citizens. In his works, he recounts how the roman meals were split into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius also recounts how the ancient chefs made use of a good variety of herbs, including many that are still in use today such as basil, fennel and dill. During the next few hundred years, the rich and powerful families of Wesstern Europe tried to lay on the most extravagent banquests, and consequentially cooks and their recipe collections were highly sought after. However, it wasn`t until the 19th century that fine cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cookery books were increasing in popularity as a result of better eduction, more free time and being a little richer. |
