The History of Recipes
Experts have traced the existence of recipes way back into antiquity, certainly as far as the ancient Egyptians, and possibly even further. Interesting though that maybe, mostly, these early records were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
During the time of the Roman Empire a roman called Apicius compiled a few scripts detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Romans made use of a good variety of herbs and spices, including some familiar names such as thyme, rue and dill. In the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from the Middle-East, including spices such as coriander, parsley, and rosemary. The introduction of these new herbs and spices prompted a torrent in books on cooking, the majority of which still exist in private cookery archives. By the arrival of the 20th century, cookery books were highly popular mostly due to increased literacy, increased leisure time and disposable income. |
