The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into ancient history, in truth as far into history as the early Egyptians, and maybe even further. However, mostly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
During Roman times 25BC a roman called Apicius compiled a collection of scripts which described recipes cooked by wealthy Romans. He recounts how the meals were split into hors d`oeuvres, main course and desserts, something that is very familiar to us today. Additionally, he informs us how the Roman cooks were skilled in the use of a good variety of herbs and spices, including a few that are still present in modern kitchens like bay, mint and dill. In the fifteenth century, knights returning from the crusades brought back many new foods and herbs from middle-east cuisine, including spices like basil and rosemary. The introduction of these new herbs and spices caused an increase in books on cooking, some of which still exist in academic collections. Like it or not, the introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, permitting everyone to access massive numbers of recipes such as those found on our web site. |
