The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions far back into the far past, in truth as far as ancient Egypt, and maybe even further. Interesting though that is, sadly, these old records were just basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history are a few clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into The time of the romans around 25BC a roman called Apicius created some documents which described recipes prepared by wealthy Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Additionally, he tells us how the chefs of Roman times used a good variety of herbs, including many that are still in use today for example thyme, mint and parsley. Moving on, we find two interesting cookery books which appeared in the 1300s ; a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these books have no connection with the indian curry that is popular today, but instead accounts of the types of meals served to the rich and wealthy people of the time. Later, in the 15th century, people returning from the crusades brought back many new foods and herbs from Arab cuisine, including spices such as basil and coriander. These new foods and tastes caused an explosion in books on cooking, many of which are kept safe in private cookery archives. By the advent of the 1900s, cookbooks are increasing in popularity mostly as a result of higher levels of literacy, leisure time and a general increase in wealth. |
