The History of Recipes
It is possible to read the history of meal recipes way back into the distant past, certainly as far back into history as pharonic Egypt, and maybe further still. However, generally, these ancient cook books were just basic hieroglyphic instructions for meal preparation.
During Roman times 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes enjoyed by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvres, entrees and desserts, something we still use today. He also describes how the cooks of Roman times used many aromatic flavors, including a few that are still present in modern kitchens such as thyme, rue and parsley. In the fifteenth century, knights returning from the crusades brought us a variety of foods and spices from middle-east cuisine, such as coriander, parsley, and basil. These new herbs and spices caused a surge in books on cookery, most of which still exist in academic collections. By the arrival of the 1900s, recipe publications are greatly in demand as a result of higher levels of literacy, more free time and having more money to spend. |
