The History of Recipes
Experts have traced the existance of recipes way back into history, in truth as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. However, these, early records were just very simple hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the romans 25BC a man called Apicius created a collection of scripts describing recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and dessert, something we still use today. Additionally, he describes how the ancient cooks made use of a wide range of aromatic flavours, including many that are still in use today such as thyme, fennel and dill. Over the succeeding few centuries, the rich families of Europe competed with each other to serve the most extravagent meals, and consequentially the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s that haute cuisine and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, testing, and recording the recipes that were being prepared for the better households. When we get to the twentieth century, cookery publications are increasing in popularity as a result of more people being able to read, more spare time and being a little richer. The TV revolution brings us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes just like those on this site. |
