The History of Recipes
It is actually possible to trace the history of written cooking instructions far back into history, certainly as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. However, in the main part, these early cookbooks were just basic pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to historians is a series of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. During the time of the Roman Empire a roman called Apicius compiled some scripts detailing recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were separated into starters, main course and afters, a style of dining still practiced today. Aspicius also informs us how the Romans made use of a good variety of aromatic flavours, including a few that are still present in modern kitchens such as bay, fennel and dill. As our culinary historical trip moves on a few more years there were two recipe books which appeared in the 14th Century : one book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, they are not about the spicy food that is popular today, but rather recipes for the types of meals prepared for the rich people of that time. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the East, including coriander, parsley, basil and rosemary. The introduction of these new foods and spices was responsible for an increase in manuscripts on cookery, many of which still exist in private libraries. By the arrival of the 20th century, cookery books were in great demand, mostly as a result of increased literacy, people having more leisure time and having more money. Like it or not, the introduction of television gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes such as those found on our site. |
