1 tsp fennel seed, crushed
1/2 tsp garlic salt
1/4 tsp white pepper
1/4 tsp ground red pepper (cayenne)
4 each boneless, skinless chicken -breast, halves (appx 1 lb)
2 tsp vegetable oil
4 each kaiser rolls, split
4 each slices monterey jack cheese -with j, alapeno peppers
Directions

=============================== 1. Mix fennel, garlic salt, white
pepper and red pepper.
2. Rub chicken with fennel mixture.
3. Heat oil in 10-inch skillet over medium-high heat.
4. Cook chicken in oil 15 to 20 minutes, turning once, until juice is
no
longer pink when centers of thickest pieces are cut.
5. Place chicken on bottoms of rolls.
6. Top with cheese and tops of rolls.

The History of Recipes
Recipes as an idea can be observed back into distant history, at least as far back into recorded history as the Egyptians, and possibly even further than that. However, mostly, these ancient cookbooks were just simple pictorial recipes for preparing food.
Fascinatingly, the most ancient recipe discovered, according to historians is a collection of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into The time of the roman empire 25BC a man called Apicius compiled a collection of documents which described recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the Roman chefs used many aromatic flavours, including a few that are still present in modern kitchens like thyme, fennel and parsley. As our culinary historical trip moves to more modern times there are two interesting recipe books from the fourteenth century - one book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, these books are nothing to do with the indian food that is served today, but instead descriptions of the types of meals on the menus of the upper classes of the time. In the 15th century, the Crusaders brought back many new foods, spices and herbs from the holy land, including spices like coriander, parsley, and rosemary. The introduction of these new foods and spices caused a surge in recipe manuscripts, the majority of which are now in private collections. The introduction of television brought us celebrity TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes like the ones you can find on our site. |
