1 tsp fennel seed, crushed
1/2 tsp garlic salt
1/4 tsp white pepper
1/4 tsp ground red pepper (cayenne)
4 each boneless, skinless chicken -breast, halves (appx 1 lb)
2 tsp vegetable oil
4 each kaiser rolls, split
4 each slices monterey jack cheese -with j, alapeno peppers
Directions

=============================== 1. Mix fennel, garlic salt, white
pepper and red pepper.
2. Rub chicken with fennel mixture.
3. Heat oil in 10-inch skillet over medium-high heat.
4. Cook chicken in oil 15 to 20 minutes, turning once, until juice is
no
longer pink when centers of thickest pieces are cut.
5. Place chicken on bottoms of rolls.
6. Top with cheese and tops of rolls.

The History of Recipes
Written cooking instructions as an idea can be observed far back into the far past, at least as far back into recorded history as the Egyptians, and quite possibly further than that. Interesting though that is, sadly, these ancient recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to historians is a collection of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Progressing into Roman times 25BC a roman called Apicius created a number of documents describing recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius also describes how the ancient chefs made use of many spices, including a few that are still present in modern kitchens such as bay, fennel and parsley. Later on, in the 15th century, people returning from the crusades brought us many foods, spices and herbs from the holy lands, including coriander, parsley, and basil. These new foods and tastes caused an increase in recipe manuscripts, the majority of which still exist in private cookery archives. Over the succeeding few hundred years, the families of Europe competed with each other to serve up the best banquets, and consequentially the best cooks and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and recording the recipes that were being prepared for the better households. The arrival of television brings us cooking programs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on our site. |
