10 lb potatoes
1 cup celery, finely chopped
8 eggs, hard-boiled
1 cup fresh parsley, finely chopped
2 cup dill relish
2 pt mayonnaise
1 cup sweet relish
3/4 cup yellow mustard
2 cup green olives, chopped
1 salt, to taste
2 cup onions, finely chopped
1 tabasco
Directions
Boil potatoes in their jackets. Let cool, then peel and chop into
large chunks. Mix mayonnaise, yellow mustard, Louisiana hot sauce,
and salt together. Add potatoes, along with the rest of the
ingredients, and mix well. You can make this the day before and
refrigerate it overnight. You may need to put a little more dressing
on it if it is a little dry. "Serves 8 Cajuns or 24 other peoples for
a good picnic."

The History of Recipes
It is possible to read the history of `recipes` back into antiquity, in fact as far back into recorded history as the Egyptians, and quite possibly further than that. Having said that, sadly, these early cookbooks were just primitive pictorial instructions for preparing food.
Later on, in The time of the roman empire 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. This early Roman chef informs us how the Roman chefs made use of many aromatic flavors, including some familiar names such as thyme, mint and dill. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from middle-east cuisine, including parsley, basil and rosemary. These new foods and spices prompted an eruption in publications on food, some of which still exist in private collections. The arrival of television brought us TV chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to search through massive numbers of recipes like the ones you can find on sites such as this. |
