The History of Recipes
Recipes as an idea can be found far back into ancient history, certainly as far back into history as ancient Egypt, and quite possibly further than that. Having said that, generally, these old records were just simple pictorial instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. As we move into Roman times 25BC a roman called Apicius wrote a number of scripts describing recipes prepared by wealthy Romans. In his works, Apicius tells us how the roman meals were separated into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the Roman cooks used many different spices, including a few that will be familiar to modern cooks like thyme, rue and parsley. As we move on, we find some recipe books dating from the 1300s ; one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, these two books are unconnected to the spicy food that is served today, but instead recipes for the types of food on the menus of the upper classes of those days. Later, in the fifteenth century, people returning from the crusades brought back many spices and herbs from middle-east cuisine, including spices such as parsley and basil. The introduction of these new herbs and spices created an eruption in cookery books, some of which are kept safe in private libraries. The revolution that is television gave us TV cookery programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through thousands of recipes like those on this web site. |
