The History of Recipes
Historians have traced the existence of recipes way back into history, in fact as far back into recorded history as the early Egyptians, and quite possibly further than that. Having said that, sadly, these old cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts in ancient history are some clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes prepared by the Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main course and desserts, something that is very familiar to us today. This early Roman chef describes how the ancient Romans used many aromatic flavours, including some familiar names like thyme, fennel and asafoetida. Over the next few centuries, the rich and powerful families of Europe strove to lay on the best banquets, and as a result the best cooks and their recipe collections increased in prestige. Even so, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, trying out, and writing down recipes that were common in the better off homes of the day. By the arrival of the twentieth century, cookery publications are starting to become popular due to increased literacy, more leisure time and a general increase in wealth. The introduction of television brings us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
