FILLING
MIX TOGETHER, SET ASIDE
1/2 cup brown sugar packed
1 tsp cinnamon
1 tbsp butter, melted
1 tbsp flour
1/2 cup walnuts, chopped
CREAM TOGETHER
1/2 cup butter
1 cup sugar
ADD AND MIX WELL
2 egg yolks, (save whites)
1/2 cup milk
1 lemon, grated rind
1 orange, grated rind
SIFT TOGETHER AND ADD
1 1/2 cup flour
1 tsp salt
2 tsp baking powder
Directions
Beat 2 egg whites until stiff but not dry, fold into batter. Pour
little over half the batter in a well greased 9" pan and smooth
evenly. Sprinkle filling lightly over batter, then dribble remaining
batter over filling. Bake at 350~ for 40 to 45 mins.

The History of Recipes
Recipes as an idea can be observed way back into antiquity, at least as far back into history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, in the main part, these early cook books were just primitive hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history is a collection of stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Moving our culinary historical trip onwards, there were some recipe books dating from the fourteenth century ; a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, these books are not about the spicy food that we all know today, but instead recipes for the types of food on the menues of the upper classes of the period. In the 15th century, people returning from the crusades brought us many foods, spices and herbs from the holy land, including spices like rosemary and coriander. The introduction of these new herbs and spices caused a torrent in cookery books, most of which are now in private collections. Over the next few hundred years, the rich and powerful families of Wesstern Europe competed with each other to offer the best banquets, and consequentially the best chefs and their recipe collections increased in prestige. Even so, it wasn`t until the nineteenth century the formal cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, testing, and recording the recipes that were being prepared for the better households. When we get to the 1900s, cookery books were in great demand, due to better eduction, people having increased free time and a general increase in wealth. The arrival of TV brings us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everyone to search through thousands of recipes such as those found on this web site. |
