FILLING
MIX TOGETHER, SET ASIDE
1/2 cup brown sugar packed
1 tsp cinnamon
1 tbsp butter, melted
1 tbsp flour
1/2 cup walnuts, chopped
CREAM TOGETHER
1/2 cup butter
1 cup sugar
ADD AND MIX WELL
2 egg yolks, (save whites)
1/2 cup milk
1 lemon, grated rind
1 orange, grated rind
SIFT TOGETHER AND ADD
1 1/2 cup flour
1 tsp salt
2 tsp baking powder
Directions
Beat 2 egg whites until stiff but not dry, fold into batter. Pour
little over half the batter in a well greased 9" pan and smooth
evenly. Sprinkle filling lightly over batter, then dribble remaining
batter over filling. Bake at 350~ for 40 to 45 mins.

The History of Recipes
Written cooking instructions as an idea can be tracked far back into history, in truth as far back as early Egypt, and maybe further still. Interesting though that is, sadly, these old records were just simple hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe in existence, according to experts in ancient history is a collection of ancient tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. Moving our culinary historical trip onwards, we find two interesting recipe books which appeared in the 14th Century ; a book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these books have no connection with the curry that we all know today, but rather recipes for the types of food served to the upper classes of those days. Later on, in the 15th century, people returning from the crusades brought back many new foods and herbs from Arab cooking, including parsley and basil. These new foods and tastes created an explosion in publications on food, the majority of which still exist in private libraries. Over the succeeding few centuries, the powerful and wealthy tried to offer the most exotic meals, and as a consequence, the best cooks and their recipe collections increased in prestige. However, it wasn`t until the 19th century that fine cookery and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, trying out, and writing down recipes to help cooks of their time. When we get to the 20th century, cook books were starting to become popular mostly as a result of more people being able to read, people having more leisure time and a general increase in wealth. The TV revolution gave us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on sites such as the one you are reading now. |
