The History of Recipes
Written recipes as an idea can be tracked back into history, certainly as far into history as the Egyptians, and potentially, even further back. Interesting though that is, these, ancient records were just primitive hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, is a series of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into Roman times 25BC a man called Apicius compiled a few documents describing recipes cooked by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and afters, something that is very familiar to us today. Aspicius tells us how the Roman cooks were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks like thyme, rue and parsley. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from the holy land, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas prompted an outbreak in manuscripts on food, some of which still exist in private libraries. When we get to the twentieth century, cooking books were in high demand, due to better eduction, people having increased leisure time and being a little richer. The TV revolution brought us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on sites such as the one you are reading now. |
