The History of Recipes
Academics have proved the existence of recipes back into antiquity, in fact as far back into history as the Egyptians, and potentially, even further back. Interesting though that is, sadly, these ancient records were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to experts in ancient history are some clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As we move into The time of the roman empire 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals were separated into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the chefs of Roman times used a good variety of aromatic flavors, including many that are still in use today like thyme, mint and asafoetida. As our culinary historical trip moves to more modern times there are some books from the fourteenth century : a book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these are not about the indian curry that is served today, but rather recipes for the types of meals served to the nobility of that period. In the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cooking, including spices like parsley, basil and rosemary. These new foods and tastes caused an increase in books on cooking, some of which still exist in private libraries. By the arrival of the twentieth century, cooking books were greatly in demand due to more people being able to read, people having increased spare time and a general increase in wealth. The introduction of television brought us TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on sites such as this. |
