The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions way back into the distant past, at least as far back as early Egypt, and potentially, even further back. In practice though, generally, these old recipes were just very basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire 25BC a roman called Apicius wrote a few documents detailing recipes enjoyed by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. Additionally, he recounts how the cooks of his times were skilled in the use of many different spices and herbs, including some that we all recognise such as thyme, mint and asafoetida. For the decades that followed, the powerful and wealthy competed to serve the best banquets, and as a result chefs and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the 1800s that fine cooking and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the time we get to the 1900s, cook books were highly popular due to increased literacy, more spare time and disposable income. |
