The History of Recipes
It is actually possible to track the history of recipes back into ancient history, at least as far as ancient Egypt, and maybe further still. Interesting though that maybe, generally, these ancient cook books were just very basic pictorial recipes for meal preparation.
In fact, the oldest recipe found, according to food historians are some tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy roman citizens. In his publication, he describes how the meals were separated into starters, main meal and afters, something that is very familiar to us today. Aspicius also informs us how the chefs of Roman times used many aromatic flavours, including a few that will be familiar to modern chefs for example thyme, mint and parsley. Later on, there are some recipe books published in the 14th Century : a cookery book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Amusingly, they are unconnected to the curry that appears on menues today, but rather accounts of the types of meals on the tables of the nobility of the period. Later on in the 1400s, the Crusaders brought back many foods and spices from the East, including parsley, basil and rosemary. These new spices and herbs was responsible for an eruption in manuscripts on cooking, some of which still exist in private cookery archives. By the time we get to the 20th century, cooking books were in great demand, as a result of increased literacy, people having more spare time and having more money to spend. |
