The History of Recipes
Historians have traced the existence of recipes back into the distant past, in fact as far back into history as the ancient Egyptians, and maybe even further. However, generally, these old records were just simple pictorial recipes for meal preparation.
Progressing into The time of the romans 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient Romans used many different herbs, including some that we all recognise like bay, mint and dill. Over the following few centuries, the powerful families of Europe strove to serve the most exotic banquets, and consequentially chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s that cookery and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, verifying, and writing down recipes that were common in the better off homes of the day. By the arrival of the twentieth century, recipe publications were greatly in demand mostly due to better eduction, leisure time and disposable income. |
