The History of Recipes
Written recipes as an idea can be found back into the far past, in truth as far as ancient Egypt, and maybe even further. In practice though, mostly, these old recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
During the time of the Romans a man called Apicius created a few documents which described recipes prepared by wealthy Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. This early Roman chef describes how the Roman chefs used many spices, including a few that will be familiar to modern chefs like bay, rue and dill. Later on, in the 15th century, knights returning from the crusades brought us many new foods and herbs from the Middle-East, including spices such as parsley and basil. The introduction of these new tastes created a torrent in recipe publications, most of which still exist in private cookery archives. When we get to the 20th century, cooking publications are increasing in popularity mostly as a result of increased literacy, leisure time and being a little richer. |
