1 1/3 cup chocolate cookie crumbs
2 tbsp sugar
1/4 cup butter or margarine
1 1/2 cup sour cream
1/2 cup sugar
3 eggs
1 tbsp flour
2 tsp vanilla
1/4 tsp peppermint extract
3 8oz packages of cream cheese
2 tbsp butter
2/3 cup crushed peppermint candy
Directions
Preheat oven to 325F. Combine first 3 ingredients and press into a
9-inch springform pan. Blend sour cream, sugar, eggs, flour and both
extracts until smooth. Add cream cheese and 2 T butter. Stir in
crushed candy.
Pour into crust and bake on lowest rack of oven for 50-60 minutes or
until firm. Allow to cool (top may crack) and refrigerate overnight.
Remove from pan and serve.
Top with sweetened whip cream and garnish with candy cane if desired.

The History of Recipes
It is possible to read the history of written recipes way back into distant history, in fact as far as the early Egyptians, and quite possibly further than that. In practice though, mostly, these ancient recipes were just primitive pictorial instructions for preparing meals.
Later on, in The time of the roman empire 25BC a roman called Apicius assembled a few documents showing how to cook the recipes prepared by wealthy Romans. He describes how the meals were divided into appetizers, main meal and afters, a style of dining still practiced today. Additionally, he tells us how the Roman cooks used many different aromatic flavours, including many that are still in use today like bay, mint and parsley. For the decades that followed, the upper-class families of Wesstern Europe strove to lay on the most exotic banquets, and because of this the best chefs and their recipes were at a premium. Notwithstanding that, it was during the 19th century the formal cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, trying out, and recording recipes to allow everyone to enjoy them. The arrival of television brings us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access thousands of recipes like those on our site. |
